Kitchen Tools

There are only a few required kitchen tools that you absolutely need to start making sushi. (Plenty more that are useful, but technically optional). So here they are.

A long knife that can slice

When you cut fish for sushi, you slice it (draw your knife back), ideally with a single stroke, so you want a knife that’s sharp enough that can do that and also long enough. I use a Dalstrong Shadow Black Yanagiba Knife, but any long sharp knife will do.

A Cutting Board

I’ve lately started using disposable cutting boards because the clean-up is so much easier

A big bowl

You need a big bowl to mix your cooked rice with the sushi rice vinegar

A big cooking pot, a rice cooker, or a Donabe

The best tool for cooking rice is the one you’re most comfortable using. All ways of cooking the rice are fine

A rice paddle or spatula

A rice paddle is for mixing the sushi rice vinegar into the rice
